Our argricultural products: wheat, coriander, herbs, pulses and a small vegetable garden

For a few years the argricultural farm I l Moro has chosen to use the organic method, the growing of wheat, coriander and the production of extravergine olive oil are rigorously controlled and with the certificate as organic products.

Organic argriculture means producing food of high quality without the use of synthetic chemical products ( fertilizers, weed killers, insecticides, fungus chemicals ) neither OGM caring at the same time to maintain the fertilization of the land.
Infact organic apart from assuring the consumer the goodness and safety of the food product this contributes to retain the ecological enviroment of the plants.
In Europe organic argriculture is controlled by the regulations of the European market no: 2092 of 1991 that foresees precise rules for the production, transformation and commercialization of organic foodstuffs in all the various stages. The farms that use the organic method are subject to control apart from the system by the authorites, such authorites can cancel the trademark if the product isn't made according to the fixed regulations.

Our olive oil
To produce extravergin olive oil by organic cultivation it demands a lot of attention and professionality and it is a reason to be proud of our argricultural farm I Moro. Our Olive Oil is a product which brings together the goodness of the organic quality and the safety for the consumer. For its typical nourishing characteristic olive oil is a basic foodstuff in a correct diet. It contains fats, similar to those found in the human body and has a high quality of vitamin E, A, K, and D with have antioxidant properties and a positive effect on the bodies cells. The presence of antioxidants makes extravergin olive oil particulary important for our health. It has been infact scientifically proven that its constant use encourages, if used crude a lowering of the bad cholesterol level (LDL) and rises the good one (HDL) helping to prevent cardiovascular diseases and arteriosclerosis. Extravergin Olive Oil has an acidity inferior to 1% ( one gram to every 100 grams ) to be able to use the trademark "Organic Olive Oil" it is necessary that all yhe workers ( farmers, millers, bottlers ) respect the rules imposed for organic to guarantee a healthy product free from chemical residue the argricultural farm Il Moro's Olive Oil isn't only a healthy product but first of all its vallied and tasty oil, which gives an excellent taste used crude on salads or simple on Tuscan bread.

Wheat is an essential element in the mediterranean died. Wheat is one of the principle cultivations of the argricultural farm Il Moro that produces wheat using the organic method. Wheat contains protein and is used mainly for the production of pasta, but also for some types of bread. A part of the wheat produced at the farm Il MOro is used to make the brand pasta named "Tosca" not very widespread on the market but excellent quality. The wheat is also used in the production of bread cakes, biscuits and for egg pasta.
At the argricultural farm Il Moro for the different phases of the production of wheat (from the ploughing of the soil, to the seeding, to the harvesting) we use powerful and modern machinary like big tractors and harvestrs, which allow us to coltivate large plots of land. The sowing is done mainly in the month of november. In the month of june and july the ripened wheat is harvested with the harvester which separates the chaff from the grain, the grain loaded onto trunks, goes directly to the mill to be ground. At the end of the harvesting, the soil is ploughed and prepared for the new seeding.

For a few years the argricultural farm Il Moro has started the organic production of coriander, a very well-known plant in Italy but which is proud of a long tradition. Coriander is an annual aromatic herb which comes from the same family as the caraway, anise and parsley, infact it is also called chinese parsley. It originated from the east and is known to date bake to ancient times: the egyptians, the greek and the romans used it.
The seeds from the coriandre are a basic spice in Arab, Indian and middle east cookery, where it is used to flavour meat, sausages, fish and cooked vegetables. Coriander is indispensable in the preperation of a good curry.
Confetti (in Italian coriandoli ) is thrown at carnivales gets its name from the plant-coriander: it was in fact these seeds, immersed in chalk and then left to dry, in ancient times used during the carnivales. today coriander is used in pork butcher's, in distilleries and in the confectionary industry, cosmetics and pharmaceutics at the herbalist it is possible to find coriander in herb ters and infusions and also in essential oils.

Rich in vitamins fibre and mineral salts, the most valued lentils are the italian, they are among the most appreciated pulses of mankind since ancient timrs.
Lentils are the seeds of an aromatic plant (lent esculenta) beloging to the family of pulses, the origin of the name is given from the form lenticular of the seed.
The plant presents itself in the form of a climbing stalk, branchy, which can reach a height of fifty centimetres with pods containing two or three seeds, a lenticular form, a variable yellow greenish or even brown colour.
Lentils are considered pulses of a very high nourishing vallie and contain about 25% of protein, 53% of carbohydrates and 2% of vegetable oil. They are also rich in vitamins, mineral salts and fibre in particular phosphoro and potassium.
Lentils are a food suitable in the prevention of arteriosclerosis bcause the few fats they contain are the healthy kind. Before cooking they must be soaked in water for at least eight hours.
